Shoulder is a great cut of lamb, and a more affordable alternative to leg. Shoulder is commonly sold as boneless rolled shoulder or boneless blade chops, eliminating the struggle of carving this cut when cooked with bone in. This cut is a less tender piece of meat, and thus is well suited to slow roasting or braising.
