Loin Chops

Cut from the back of the lamb, between the ribs and the point of the hips, loin chops are a delicious, easy to prepare cut of lamb. Commonly available in thick slices, these chops are best suited to quick high heat, such as grilling, searing, or broiling. Avoid letting juices escape while cooking, and allow to rest before serving for the most tender result.
